Mughlai Qorma (A Delicious Legacy)
Mughlai Qorma is a quintessential and delicious recipe from the royal kitchens of Mughals. Word has it, it was served to Shah Jahan the emperor and his guests on the inauguration of the Taj Mahal. It is a rich, creamy yogurt-based curry where the meat is braised with a mix of aromatic spices, nuts, and caramelised onions. Traditionally, Mughlai Qorma was always slow-cooked in copper utensils over charcoal fire to enhance flavours of the dish and served in the best of silverware.
