Baingan Bharta is a simple yet satisfying Pakistani vegetarian dish, essentially meaning mashed Aubergine (or Eggplant). It is a smoky flavoured curry, where the fire-roasted aubergine studded with garlic and green chilli is infused with a small collection of spices. There is something about roasting Baingan on an open flame to give it a charred skin, that gives it an incredible flavour. Â
